Honey Soy & Ginger Chicken Drumsticks

INGREDIENTS
- 1.2 - 1.5kg Lowan Park pasture raised chicken drumsticks
- 1/2 cup honey
- 1/4 cup dark soy
- 1/4 cup soy
- 1 tbsp sesame oil
- 1 tsp Chinese five spice powder
- 1 tbsp sriracha sauce
- 1 tsp ground coriander
- 1 tbsp ginger, finely grated
- 3 cloves garlic, minced
- 1/2 bunch coriander
- 1 tbsp toasted sesame seeds
METHOD
- Preheat oven to 170°C.
- In a large bowl, whisk together honey, dark soy, soy, sesame oil, Chinese five spice, ginger, sriracha sauce, coriander and garlic until well combined.
- Remove 3/4 of a cup of the marinade and set aside.
- Remove chicken from the packaging and pat dry with paper towel.
- Place chicken in marinade and toss well. Cover and refrigerate for 1 hr 30 mins.
- Place a roasting rack inside a large deep baking tray lined with baking paper. Arrange the chicken in a single layer on the rack and bake in the oven for 45- 60 mins.
- Baste the drumsticks with the reserved marinade every 10 minutes.
- Once cooked, arrange on a serving platter, sprinkle with the toasted sesame seeds and garnish with fresh coriander.
